Dr. Patel was an Indian immigrant who helped the rednecks along with Professor Chin. Both were shot dead by Jorge in a gunfight with Bobby Possumcods. BoDean defended that he was the one who drove the militia to the cabin to assassinate Woody, so the militia shouldn't have a bias against immigrants.
He also previously appeared as the shopkeep inside Woody's house, when he was shot by an armed robber. This may be a continuity error, or it was just a lookalike.
